#Repost @antonio.bachour ・・・ Recipe: Chocolate, Mango and Sable Yields 15 servings Sable Dough 120 gr butter 65 gr confectioner’s sugar Pinch of Salt 30 gr almond flour 47.5 gr whole eggs 265 gr flour Preheat oven to 160ºC/325ºF. In the bowl of a stand mixer fitted with a paddle attachment, cut the butter into small cubes and place in a bowl. Add the flour, sugar, salt and almond flour and beat until the mixture resembles breadcrumbs. Add the egg and bring the mix together until it forms a ball. Roll dough to 1/8-inch thickness between two parchment paper, cover in plastic wrap and refrigerate for 1 hour. Cut the sable dough in rectangular shape and freeze for at least 30 minutes before baking between two perforated silpan for about 15 minutes until lightly golden. Flexi Ganache 5 g silver gelatin sheets 300 g heavy cream 35 g inverted sugar 35 g glucose syrup Pinch salt 2 g agar agar 125 g Valrhona Caraibe 66% chocolate, chopped Soak gelatin in ice water until softened; squeeze out excess water and set aside. In a medium sized pot, bring heavy cream, inverted sugar, glucose syrup, salt and agar agar to a boil. Stir in gelatin to dissolve and pour over chocolate. Whisk until smooth, pour onto a rectangular silicone mold and let set in the fridge. Mango Cremeux 2 each / 5 g silver gelatin sheets 9 ounces / 252 g mango puree 3.5 ounces / 100 g whole eggs 3 ounces / 84 g granulated sugar 1 ounce / 28 g unsalted butter Soak gelatin in ice water until softened; squeeze out excess water and set aside. Whisk to combine puree, eggs and sugar over a double boiler. Cook to 185ºF / 85 C, whisking often. Remove from heat, stir in gelatin to dissolve and cool to 35C. Add butter and process with a hand blender until smooth. Pour on top the chocolate ganache and freeze them. Assembly Place the mango chocolate ganache on top the sable. Add chocolate strip in each side . Pipe on top with coconut whipped ganache and mango cremeux .
