This was a cake logically inspired by the ice cream, consisting of vanilla ice-cream, poached pears and chocolate sauce. Here I represent the chocolate sauce with a dark chocolate #cremeux , the ice cream is the mousse and the poached pears are represented all through the cake AND as a decoration.
