Q: Please describe the dessert at The Bazaar that best reflects your own personality. KH: People ask what my favorite dessert is all the time. I really don’t have a favorite. I’ve never eaten one. I’m not a dessert eater at work or away from work. I’m obsessed with making them for my guests and making them happy. I know what tastes good and I have a great sense for taste memory. So with that in mind, I tasted my first Cannelé de Bordeaux (I’ve only eaten two) 17 years ago in France and came back west to try to replicate it. I worked on it for 15 years before I ever sold one. I was really picky about getting it right. I had to consider the history of it and how particular and rigid the people of Bordeaux are about it. Out of respect for them, I wasn’t going to serve or sell one until it matched or surpassed what I had tasted. I know that it is finally correct. It taught me to keep pushing. Make small changes and to not be afraid of the results. A few years ago, a guest wouldn’t eat one because she was French and in particular, she was from Bordeaux. I said to her, “Ma’am, I didn’t invent the Cannelé, just like Vermeer didn’t invent art.
