With ❇️ @paulwagemaker_chocolates • Caramelized beetroot with balsamic and dark chocolate 🍫 ⠀⠀ Ingrediënts: 150 gr. Beetroot 50 gr. Sugar 15 gr. Water 100 gr. Heavy cream 75 gr. Butter 35 gr. Balsamic 35 gr. Honey 400 gr. Dark chocolate @callebautchocolate ⠀⠀ Method: 1. Caramelize the sugar with 15 grams of water in a pan with a thick bottom. 2. Add the beetroot and let it caramelize, remove it from the stove. 3. Add the cream, butter, balsamic and honey. 4. Mix it into a smooth mass in a blender. 5. Know you add the dark chocolate, stir well until the chocolate has dissolved. 6. Cool back to 25C 7.
