Light Orange Almond And Pecan Fruit Cake !

Let's make Christmas fruitcake !  This is not your typical fruit cake !

This is a lovely fruit cake using orange juice, butter, eggs, raisins, mixed fruit, almonds and pecans.
I've been making this same recipe for a very LONG time, and everyone loves it. 

A traditional Christmas cake, to be enjoyed with a cup of coffee or tea,
it's perfect for the holiday season.

I take you through the whole process from the very beginning
to serving this lovely cake.

Light Orange Almond And Pecan Christmas Fruit Cake
--------------------------------------------------------------------
3 cups candied fruit
2 cups flour
2 cups raisins
3 eggs
1-1/2 cups sliced almonds
1/2 cup unsalted butter ( or salted butter )
1 cup sugar
1/2 cup orange juice
2 teaspoons baking powder
1/2 teaspoon salt
zest of 1 orange
1 teaspoon almond extract
1 cup pecans

Bake 2-1/2 hours at 350 degrees F.
Recipe Note: - If using SALTED butter, simply omit the salt in the above recipe.
