#Repost @krissharv3y (@get_repost) @bakelikeapro ・・・ Now that the Pâté de Fruit is set and cooled, I've installed a 6 MM frame over the original 4 MM frame and will be adding a caramelized white chocolate ganache. This is the Valrhona framing system. Each frame is 34 CM square and hold precisely 150 g of ganache per millimeter of depth. So a 10 MM frame will hold 1,500 grams. However, I'm using a 6 MM frame on top of the 4 MM frame so I'll require 900 grams of ganache.
