My first notes are buttery, toasty and not too sweet, gradually giving way to the flavors of freshly baked shortbread with a pinch of salt. It was created by accident when L'@ecolevalrhona Pastry Chef @frederic.bau absentmindedly left some white chocolate in the double-boiler for too long. When he remembered it, he noticed it had turned blond color and the faint smell of toasted shortbread and caramelized milk wafted out of the pan. It would take eight years of research and development to engineer a distinctive recipe for the finished couverture that has paved the way for novel creations and flavors. Who am I?
