I want to see your perfect macarons too! πŸ’œ Macaron Recipe (Italian method) 110g egg whites (1) 300g confectioners (powder) sugar 300g almond meal 300g sugar 70ml water 110g egg whites (2) Mix together the egg whites (1) with almond meal and confectioner sugar (add the food coloring in this step, if necessary). Make a syrup with the sugar and water and boil to 118 ΒΊ C ( point in the thermometer). Beat the egg whites (2) in the stand mixer and add this syrup slowly. This is the italian meringue. Beat until it gets consistent, but still warm. Mix first half of the meringue into the batter, mix well but slowly. Then you mix the rest of the meringue, until the macaronage is done. Pipe the discs with a pastry bag and a tip on a Silpat. Don’t let them dry. Bake in oven heated in 120 ΒΊ C for 16 minutes (this time depends on the size of macarons and depends on the oven).
