One morning during preopening, @chefgrant888 called me into his office along with five other pastry chefs. “Mr. Harvey,” he said in his Scottish accent, “April 15 is opening day and we are having a party. I need desserts from you. Say 5 ..500 each.” “Ok chef, 500 desserts. No problem.” “No Mr. Harvey. We need 500 of five.” “That’s 500 desserts. We can do that.” “Mr.Harvey, five desserts, 500 of each. It’s Mrs. Wynn’s birthday.” I did graduate second to last in high school so I’m not the smartest person. “Chef, that’s 2500 desserts!” “The party is for 15,000. Would you like to do all of them? Or would you like to do your 2500 and be quiet?” Large numbers are intimidating. Maintaining the quality is the hard part.
