With @nickkunstchocolates Raspberry Caramel RECIPE‼️ •Ingredients; -280g sugar -30g heavy cream -90g raspberry purée -30g dark Chocolate callets -180g unsalted butter •Instructions. 1. Put the sugar in a pan with a thick bottom and caramelize until golden brown. 2.add the cream and raspberry purée and mix well! (Be careful it’s hot! 3.Cut the butter in small cubes and pour piece by piece into the caramel, add dark chocolate callets and cool down until 27 degrees celcius. Shelf life 4-8 weeks when stored at 16 degrees celcius.
