#Repost @krissharv3y (@get_repost) @bakelikeapro ・・・ I need to explain my last post. It was going to look much different than it did but I erased the original post and wrote it as you read it. It was more reflective of a guest who brought me a photo off Yelp of a dessert made in a purchased tart shell and asked why we don't have it anymore. I explained it was of the last chefs creation and I removed it. I didn't tell him my predecessor thought it was okay to use a factory made shell in a Beverly Hills dining room. I have 17 cooks. We aren't there to open boxes. I don't want to come over as someone that hates other pastry chefs. I certainly don't. I'm a huge fan of my contemporaries, the chefs that came before me and several that are on their way up. I can't name them all and many you've not heard of. I love and respect @patrick_roger_off, @philippe_conticini and @pierrehermeofficial @jacquesgenin . We all do. Those are three of the best pastry chefs in the universe. But people like Shawn @fevechocolates, Ramon @puurchocolat, @melissacoppel, @orlando_jsoto, @lemontreecakesuk, @giorgiodemarini, @meg_galus @marijncoertjens are chefs that I just love. Sylvian Guyez, Pascal Janvier, En Ming Hsu aren't all over social media but they've influenced my career deeply. And the late Robert Linxe of @lamaisonduchocolat_paris cannot be forgotten. And I have a very large crew of dedicated cooks that will all graduate to do great things and I respect and love them all. Their contributions to my career are immeasurable. I'm sorry if I left someone off.
