Process :inside a saucepan put together the water, milk , butter, salt, sugar, boil it for 30 second count really sift the flour put it in mixing bowl with the paddle add boiling mix and turn in small speed until all the steam are gone The mix need to be a room temperature when you add the whole egg gradually check the texture (not to hard not to soft ) like chocolate spread. Put it piping bag with tips and use it there one video in my publication.170c for 40 minutes depending the oven 2.Cremeux chocolate. 130g whipping cream 35%fat,20g sugar ,29g egg yolk,60g dark chocolate ,45gmilk chocolate. Process put all ingredients in saucepan except the chocolate cook this mix util exactly 82 c poor on the chocolate and blend keep it in the fridge until is cold and ready to use better to do it one day before . 3.Dark chocolate glaze. 60g water ,120g cream ,180g sugar, 60g cacao powder, 6g gelatin 200bloom important, 20 g olive oil .
