With chef @gregorydoyen ・・・ Find the recipe of one of my best seller creation of the Rabbit 🐇 Moon 🌝 Cake for the Chinese mid-autumn festival. ⠀ Mid-Autumn Festival or Moon Festival is a harvest festival, celebrated in China and other East Asian countries. It’s always in September or October, on month 8 day 15 of the Chinese lunar calendar. It is celebrated when the moon is believed to be the biggest and fullest and Chinese people believe a full moon is a symbol of reunion, harmony, and happiness. This year it's September 13th. ⠀ Mooncakes are offered between friends or on family gatherings while celebrating the festival. Typical mooncakes are round pastries, measuring about 10 cm in diameter and 3–4 cm thick. A rich thick filling usually made from red bean or lotus seed paste is surrounded by a thin (2–3 mm) crust and may contain yolks from salted duck eggs. ⠀ There is a very nice legend about the moon rabbit - the personage of my moon cake creation. This rabbit in Asian folklore who lives on the Moon, based on pareidolia interpretations that identify the markings of the Moon as a rabbit.
