With @damienwager ・・・ Soufflé tester.... Sometimes, for continuity, when we make a batch of soufflés, I like to cook one off, and leave it. See how long it can hold it’s shape, and even under stress (sitting a tea spoon on top), just to check the integrity of the mix and see how long the waiting staff have to work with from oven to table. This picture was taken 4 minutes after it was removed from the oven.
