Choco Pie recipe (for about 10 pieces) Vanilla whipped ganache : 2g Gelatine leaf (1pce) 160g Fresh cream 35% (whipping cream) hot for infusion 1p Vanilla pod 70g White chocolate (not melted) 160g Fresh cream 35% (whipping cream) cold for the end Soak the gelatine for at least 20 min in cold water. Boil the fresh cream, add the scratched vanilla and let infuse 20 min with a wrapping film on top of the pot. After this time, strain and heat it up again infused cream, add the soaked gelatine melted in it Pour into white chocolate, wait a few seconds do a ganache and blend it with a hand mixer. Add the cold fresh cream and blend again. Leave a rest at least 12 hours in the fridge before using it. Almond sponge : 90g Icing sugar 90g Almond powder 75g Whole egg 50g Egg yolk 70 g Flour 165g Egg white 60g Sugar (for egg white) Whip together with a wisk, icing sugar, almond powder, whole eggs and egg yolks. At the same time or later whip the egg whites, tighten them with the sugar adding it little by little. Start do the mix sifting the flour into the whipped whole eggs mix. Then add the whipped egg white to the other mix and alternate the incorporation of flour and egg whites. Mix well gently.
