With master chocolatier ❄️ @nickkunstchocolates Wish you a Merry #Christmas and a fantastic new year! 🎄❄️ Santa’s hat design 🎅 Crème brûlée Recipe ‼️ ‘Create the most delicious crunchy brûlée bonbons with this recipe’ I had to make a crème brûlée filling recipe for all of you, so many requests so decided to experiment for you! 🧡 •Ingredients for the crunchy layer. -100g sugar -20g water •Instructions. 1. Pour the sugar and water in a pot, and make a golden brown caramel(be careful it’s hot!) 2. Pour over a silicone mat and spread as thin as possible, let cool until it becomes crispy. 3. Break into small pieces which fits into the bonbon. 4. Temper white chocolate and coat the sugar crisps so they are totally covered. 5. Let it crystallize for 1 hour. (Set aside) •Ingredients for the Crème brûlée filling. -1 Vanille bean -100ml heavy cream -180g white chocolate callets •Instructions. 1. Bring the cream to a simmer, scrape out the vanille bean and pour into the cream. 2. Pour over the white chocolate callets and emulsify. 3. Cool down to 27 degrees and it’s ready to use. Bringing the bonbon together. Pour some coated sugar crisps into the bonbon and cover with the vanilla chocolate filling.
